 北海道オホーツク管内の牧場で3年前に発生した牛の集団死は、「ドングリの食べ過ぎ」が原因―。網走家畜保健衛生所(北海道北見市)がこうした研究成果をまとめた。牛では国内で初症例。一般的に牛はドングリを好まないが、この牧場ではドングリが大量に落ちていたという。
 同衛生所によると、集団死は20149月から10月の間に管内の公共牧場で発生。放牧していた肉用牛13頭と乳用牛2頭の計15頭が腎臓の障害などで相次いで死んだ。同衛生所が解剖したところ、牛の胃やふんから大量のドングリの殻が出てきた。血液からはドングリの成分の一つ「ポリフェノール」が検出された。

牧場に大量のドングリが落ちる

 現場では発症3日前に突風が吹き、牧場内のミズナラ約2千本からドングリが大量に落ちていた。
 ポリフェノールは赤ワインにも含まれ、健康成分として知られるが、過剰摂取は「人間でも便秘や女性ホルモンの乱れといった影響がある」(同衛生所)。海外では、今回によく似た牛の中毒事例が報告されているという。

なお、日本人が最も多くポリフェノールを摂取している飲料は、2009お茶の水女子大学ネスレ日本の共同研究・調査により、コーヒーが最も多かったという結果が提示されている。同量のコーヒーと赤ワインに含まれるポリフェノールの量は拮抗しており、近年ではアルコールを含まないポリフェノール飲料としてのコーヒーへの注目度が上がってきている。

以来10数年間、研究者の間では化学的見地からではなく、食物繊維5大栄養素タンパク質脂質炭水化物ビタミンミネラル)に次ぐ栄養素として、細かい研究が行われている。これまでにも様々な種類のポリフェノールが発見・抽出・開発され、医薬品健康食品として多くの商品を生み出した。

同様に抗酸化作用を持つ物質として、抗酸化ビタミンであるビタミンAビタミンEに関して、心筋梗塞の予防効果があるかなどの研究が、1990年代に行われている。

赤ワインに含有する抗酸化物質「レスベラトロール」はヒトに対する健康効果は無いとの研究報告がJournal of the American Medical Association Internal Medicineに掲載された。

日本では縄文の時代からドングリを食料としてきた歴史があります。今でも一部地域ではドングリを使った食品が生産されています。長崎県では馬刀葉椎(マテバジイ)で焼酎が造られ、鳥取県でも焼酎が造られています。高知県の樫(カシ)豆腐や、宮崎県の樫蒟蒻(コンニャク)等は、その作り方から明らかに韓国から伝わった「トトリムッ」が原形だと判りますが、今やその地方の伝統食になっています。岩手県では餡にドングリを使った「しだみ(ドングリの意)団子」が有名ですし、長野県では代用コーヒーが作られています。どれも大した生産量ではありませんが、町興しの一環として行われているようで、新たなメニュー開発を積極的に行っている地方も増えています。また、ドングリを使ったアイスクリームは結構方々で作られているようです。今では食べた経験がある人さえ稀になったドングリですが、戦中戦後の食糧難の一時期には代用食として利用された記録があります。
大変栄養価の高いものですが、強い渋みがあり、それが食品としての利用を妨げているようです。この「渋み」はタンニンによるもので、タンニンは加水分解で多価フェノールを生じる収斂性のある植物成分の総称で、狩猟民族には馴染みのあるもので、昔も今も動物の皮をなめす為に利用しています。一方、農耕民族である日本人には「皮なめし」は余り馴染み(一部では利用されていた)が無く、もっぱら食料として利用してきた経緯があります。
日本人はドングリを食料として利用する際、食用に障害となる「渋み」に関しては問題にしなかったようです。それは面倒であっても「アク抜き」さえすれば食べられたからです。
ところが海外でのドングリに対する評価は少し違うようで、主に西洋ではタンニンは「消化器の損傷や蛋白質の吸収を阻害する作用がある」とのことで「毒」だとの認識が強く、食料に供することには抵抗があるようです。しかし、西洋も日本同様に古くから食用としてきた長い歴史があり、今でもドングリを使ったリキュールやコーヒー(代用コーヒー)もありますので、必ずしも食品としての利用価値が下がった訳ではないようです。
海外のドングリを使った食品では、スペインのリキュール「リコール・デ・ベリョータ」や、フランスの有機栽培認定機関”ECOCERT”で認定されているオーガニック穀物コーヒー等が有名です。「リコール・デ・ベリョータ」は一般的に飲まれるメジャーなもののようです。また、直接ドングリを食べる訳ではありませんが、ドングリを食べて育つイベリコ豚は、その肉質の良さから世界中の食通から高い評価を得ています。

タンニンに関してのある実験では、野ネズミの一種「赤ネズミ」を二つのグループに分け、タンニンを含む餌と含まない餌とで飼育すると、タンニンを含む餌で飼育したグループには必ず死ぬ個体が出ることが報告されています。しかし、徐々にタンニンの量を増やす実験飼育では死ぬ個体は出ないそうです。タンニンで死ぬ個体が増えるようでは、とっくに絶滅していても何ら不思議ではありませんし、他のものを食料とするように進化して当然の筈です。
毒となるものを食料として摂らざるを得ない生物は、得てしてその毒を帳消しにする酵素のようなものを体内に持つものが多く、毒虫や毒蛇も自分の毒で死ぬことはありません。コアラにしても通常では有毒なユーカリの葉を常食としています。森の小動物はタンニンの毒を和らげる為に、タンニン結合性唾液蛋白質と呼ばれるものを持ちます。この蛋白質はタンニンと結び付くことでタンニンの毒性を抑制する働きをします。通常時はそう多く分泌されるものではありませんが、必要に応じて増えたり、減ったりします。またタンニンを分解する酵素を出す腸内細菌もいるようです。

タンニン

 ドングリ中の成分で中毒を起こすとすれば、タンニンです。タンニンとはどういう物質でしょうか?

ちょっとインターネットで調べただけで、奥が深く読んでいると頭がくらくらしてきます。それで専門家に言わせれば「何と大雑把な!」と言われそうな位簡単に書いてみます。

 タンニとは、植物が食害動物から身を守るために葉、茎(樹皮)、果実に作り出した渋み(渋柿の渋さが好例)がある物質で、タンパク質、アルカロイド、金属イオンと結合して、難溶性の物質を作る

物質の総称である。多くの植物が大なり小なり持っている。

 我々に身近な植物で言えば、ヌルデなどの虫こぶ(皮のなめしや薬に使われるタンニン酸)、紅茶やウーロン茶、柿、栗、シソ(タンニン&タンニン酸)などがある。

 植物は巧妙です。種子が未熟で食べられては困る時はタンニンを作って食害を防ぎ、動物に種子を運んでもらいたい時はタンニンをなくしたり、不溶性にして動物に食べてもらい遠くに種子を運んでもらいます。渋柿が種子が十分に育つと果肉が甘くなり動物に食べてもらい、糞と共に遠くに運んでもらうのは典型的な例です。

 

タンニンの生理作用

 タンニンは摂取すると局所のタンパク質と結合して被膜を作り、粘液の分泌を抑えるため(収斂作用という)、消炎・止瀉作用があり、タンニンを含む植物は薬(タンニン酸製剤)として使用されるものがある。従って、タンニンを多量に摂取すると収斂作用の結果、便秘を起こす。

以上から、牛が死んだのは、ドングリとポリフェノールが検出されたため、

ドングリのポリフェノールによる死亡と考えられたということです。

ドングリのポリフェノールはタンニンであり、便秘を引き起こすことが知られています。

タンニン酸アルブミンは、別名をタンナルビンという。

50%のタンニン酸を含んでいて、110120℃に熱して胃酸で分解されないようにしてあるので、

胃ではタンニン酸による収れん作用はない。

小腸で膵液により徐々に分解されてタンニン酸を遊離し、強い収れん作用を現す。腸の粘膜の傷口の蛋白と結合し、

被膜をつくって腸粘膜の刺激を防ぐので止瀉剤となる。
 

タンニン酸そのものを止瀉剤として与えない理由は、タンニン酸は胃や十二指腸の粘膜に収れん作用を及ぼして、

食欲不振や消化不良を起こす
こと、さらにタンニン酸は小腸で加水分解を受けて、

収れん作用のない
没食子酸となることから、タンニン酸そのものは止瀉剤として使用しない。

Acorn Poisoning

The NADIS data show that acorns are one of the commonest causes of plant poisoning especially late summer in years when acorns are abundant. As the autumn continues with stronger winds and gales the problems are can increase.

Clinical Signs

  • Sudden death can occur (although poisoning generally occurs over a period days)
  • Constipation initially, followed by black watery diarrhoea.
  • Depression and loss of appetite
  • Straining to pass faeces and urinate is very common
  • Weakening, collapse and death (usually within seven days of the onset of signs)
  • The animals have a normal temperature in most cases
  • Acorns can cause birth defects if eaten in sufficient quantities by pregnant cattle Acorns contain gallotannin. In the rumen, gallotannin is broken down to gallic acid and tannic acid. Tannic acid causes ulcerations in the mouth, the oesophagus, and the rest of the intestines. It also damages the kidneys, and it is kidney failure which causes most of the death associated with acorn poisoning. Acorn poisoning will generally affect only a few animals in the herd, as acorn poisoning only occurs if animals eat large amounts of acorns (which will only occur in cattle which develop a taste for them). As tannins concentrate in milk fast-growing calves on heavy-milking dams will often be the first animals to show signs.

Diagnosis

  • On the clinical signs described above
  • Finding large amounts of acorns and/or oak leaves at post mortem (although in advanced cases this may not be the case)
  • In live animals, blood and urine tests can identify those with kidney failure

When cattle eat acorns due to limited forage, it could lead to potentially deadly acorn poisoning.

The weather has not been kind to ranchers and farmers this year, from record-setting droughts to intense flooding and hurricanes. Because of these weather changes, forage availability has been severely affected. With pastures low on forage, cattle may start eating acorns, which can lead to acorn poisoning. 

What is acorn poisoning?

Acorn poisoning, or oak toxicity, occurs when too many acorns or buds are ingested, and the gallotannin in oak foliage creates gastrointestinal and kidney problems. 

Tim Evans, a veterinary toxicologist at the University of Missouri–Columbia, says acorns do have nutritional value, but when cattle eat more than 50% of their diet in immature leaves and buds in the spring and acorns in the fall because no other forage is available, that's when the problem starts. As the famous toxicologist Paracelsus said, "The dose makes the poison." 

"Oaks have the potential to provide valuable nutrition, but animals shouldn't be left to forage entirely on oaks or noxious weeds like pigweed, which can cause a similar syndrome, and not have other forages and/or concentrate in their ration," he says.

Floron Faries, veterinarian at Texas AgriLife Extension Service, says the immature green acorns and immature oak leaves are the problem, as they contain the highest levels of toxins. He says that acorn poisoning occurs most often in September, when acorns are green, and in late winter and early spring, when the leaves are immature and about a third of their normal size. The amount of toxins depends upon the species of oak tree.

Acorn poisoning is generally not a whole-herd problem, Faries says. A few cows like the taste of the green acorns and look for them up limbs. Low quantities of forage can also drive cattle to eat acorns. While it may not be a herd-wide problem, acorn poisoning can potentially be deadly.

What are the signs?

Gallotannin in the acorn is metabolized in the rumen into tannic acid and gallic acid, explains Sam Barringer, Extension veterinarian at West Virginia University. The tannic acid causes ulceration in the mouth, esophagus and gastrointestinal tract, and is especially toxic to the renal tubules. 

The first symptom of acorn poisoning is blood-tinged diarrhea, which producers often attribute to worms, Faries says. The gallotannins irritate the gastrointestinal tract, so cattle will show abdominal discomfort, appear humpbacked or take short uncomfortable strides while walking. The kidneys may also be inflamed. 

If producers don't catch these signs, he warns, the cattle may progress to fast weight loss, though the cattle are generally thin to begin with if they are eating acorns, and difficulty in urination and defecation. The cattle will start looking gaunt; their flanks will pull up, their eyes will appear sunken, and because of dehydration the skin on their neck will stay folded after pinching it between a thumb and forefinger.

The subacute or chronic signs, Faries says, involve constipation; firm, black feces that look similar to that of a horse; and intense weakness. 

Evans adds that ascites, or fluid in the abdomen, can also occur, along with subcutaneous edema or swelling. 

Barringer notes that fast-growing calves on heavy-milking dams are usually the first to show signs because the tannins in oak concentrate in milk. 

Acorn calf syndrome

Acorn calf syndrome is a different form of oak toxicity. According to John Maas, veterinarian at the University of California–Davis, "acorn calves" are malformed calves born to cows that have ingested large quantities of acorns during the second trimester of pregnancy, which is months 3-7. The cause is the combination of poor nutrition in addition to acorn exposure. The calves have short legs, abnormal hooves and misshapen heads. He reports that they look like dwarves most of the time.

Suspected acorn toxicity in nine horses.

 

Abstract

REASONS FOR PERFORMING STUDY:

Acorn toxicity has been anecdotally reported to cause fatal colitis and colic in horses but reports in the scientific literature are sparse.

OBJECTIVES:

This study reports the diagnosis, treatment, prognosis and outcome of 9 cases with suspected acorn toxicity admitted to 2 referral hospitals.

STUDY DESIGN:

Retrospective case series.

METHODS:

Case records from 2004 to 2013 were reviewed. Horses were included in the study if they met 3 of 4 criteria: exposure to acorns; clinical and laboratory data suggesting alimentary or renal dysfunction; acorn husks in the faeces or gastrointestinal tract; and necropsy and histopathological findings consistent with acorn toxicity. Data collected included case history, clinical presentation, clinicopathological data, ultrasonographic findings, case progression, and necropsy and histopathological findings.

RESULTS:

Nine horses m

et the inclusion criteria. Five cases presenting with haemorrhagic diarrhoea deteriorated rapidly and were subjected to euthanasia or died. Four cases showed signs of colic with gas distension, displacement of the large colon and diarrhoea. Three of these (33%) survived with medical management, the fourth was subjected to euthanasia. Post mortem examination of 6 cases demonstrated submucosal oedema of the large intestine and caecum (n = 6), acute tubular nephrosis (n = 6), diffuse necrohaemorrhagic and ulcerative typhlocolitis and enteritis (n = 4), and small intestinal oedema (n = 3).

CONCLUSIONS:

Acorn ingestion may be associated with typhylocolitis leading to diarrhoea, colic and acute renal tubular nephrosis. Recovery is possible in mildly affected cases; more severe cases show hypovolaemia, intractable pain, renal dysfunction and cardiovascular failure, and often succumb to the disease process. Disease is only seen in a small proportion of the population exposed to acorns and there seems to be an increased occurrence in certain years. Further investigation into factors predisposing to disease is required, but limiting exposure to acorns in the autumn seems prudent.

Symptoms of acorn toxicity include depression and loss of appetite followed by digestive-tract issues, such as colic, gastric upset and diarrhea (often bloody). Kidney and possibly liver damage may also occur as well as bowel obstructions and ruptures. Ingesting a small amount of acorns is probably not a risk to most horses. Unfortunately, we don’t know how many it takes to add up to a toxic dose because of several varying factors. The concentration of toxic compounds, called tannins, in oak acorns, bark, leaves, twigs and sprigs varies depending on the time of year—and even from year to year. It is higher in younger acorns, buds and branches than in more mature ones, so it may be more dangerous for horses to eat them in the spring than in the fall. Acorns also seem to have higher levels of tannins in certain years, which, unfortunately, we don’t know enough about yet to predict.

Sensitivity to acorn toxicity varies among individuals, so it’s hard to know which horses might be most vulnerable. Exceptionally inquisitive horses—especially young ones—who like to put everything in their mouths, may be more at risk of overeating acorns than older horses, who are less likely to experiment with different foods.

In general, horses don’t find acorns and other parts of the oak tree particularly desirable. Fresh immature leaves are more palatable than mature ones, so they may be more tempting in the spring. In general, though, most horses still prefer to eat grass and good-quality hay. They’re unlikely to eat acorns in large amounts unless their caloric intake from other sources is limited. An example of a high-risk scenario would be a dry-lot (grass-free) paddock with several oak trees, limited hay and a large number of hungry horses competing for that hay. A big fall storm that knocks branches and acorns to the ground could exacerbate this situation.

Abstract

Although acorn poisoning is more commonly seen in cattle as a susceptible animal species, several other factors such as species of acorns also have a distinct bearing on the degree of acorn toxicity. In this study, 3 species of acorns (Quercus alba, Q velutina and Q rubera) were analyzed for their total phenolic contents. Q velutina was found to have the highest level of total phenolics and Q alba the lowest among the 3 species. The total phenolic content in Q rubera was slightly lower than that of Q velutina but markedly higher than that of 思いますQ alba. The data suggest that when evaluating a pasture on the likelihood of acorn toxicity, one containing mainly Q alba may be safer than Q velutina and Q rubera

を行って、安全性を保つ必要があります。


タンニンについては、その加工による安全性の指標が必要です。

今回の新聞記事によって、多くの国民がポリフェノールに対して不安を抱いています。

ポリフェノール全般について、有用性だけが多く報告されていますが、

個々における科学的安全性を再検討して、ガイドラインを設定する必要があると思います。

良く考えてみれば、今のドングリに対しての科学は、縄文時代から進んでいないと思います。

ドングリが日本で食べられたのは、紀元前9000年と推定されるので、1万年以上、何の進化もない。

現代科学では、タンニンのないドングリの品種改良は可能だと思います。そのようなイノベーションが新しい市場を開拓すると私は思います。それによって、飼料にも、食料にも使用できます。そういう発想が、農業発展、産業促進、食料問題解決につながるはずなんですが・・・
