毎日、毎日、毎日、毎日、毎日、
TVで「日本人は野菜摂取不足である」
という内容がCMやテレビ番組で放送されます。
最近では、低所得者層で野菜摂取が少ないと報道されました。
(低所得者層は野菜が高くて買えない。という事だけの話です)
ところで、あるCMで、
「日本では野菜や果物消費が減り、アメリカ人よりも摂取が少なくなり、そのため戦後と比較して、大腸がんが多くなった」という驚くべき、医学の常識にはない、
説明がされていました。
嘆息・・・・
まず、「日本では野菜や果物の消費が減った」というのは、本当でしょうか?
良く出るテロップは、
こんな感じです。

これだけ見れば、確かに野菜の消費が少ないように見えます。
しかし、もとのデータはこれです。

戦後、日本人は異常なほどに野菜と果物を食べているのがわかります。
消費量は戦前よりも多く、
「日本人の食事が、戦後に西洋化して野菜を食べなくなったので、大腸がんが増えた」
という話は明らかに矛盾しています。
なだらかに下がっているところだけを抜き出して、テロップをつくったのでしょうか?
次に、「日本人はアメリカ人よりよりも野菜を食べなくなって、今や、アメリカの方が野菜を食べている」
というのは本当でしょうか?
その前に、野菜とは一体なんでしょうか?
その定義は、農林水産省、総務省、厚生労働省で異なっています。

さといもは、
総務省では生鮮野菜、
しかし、
農林水産省では野菜、
厚生労働省では、「いも類」で、野菜類ではない!
ばれいしょ(ジャガイモ)は、
総務省では生鮮野菜、
農林水産省と厚生労働省では「いも類」
拡大して表示します。

農林水産省のデータでは、ジャガイモが野菜ではないのです。
(イモの分類の仕方で、データは操作できます。)
そして、そのデータのもとに作られたグラフがこれです。

アメリカの方が野菜を多く食べているのように見えます。
では、比較した「アメリカの野菜の定義」はどうなっているのでしょうか?
もし、アメリカでイモが野菜であれば、比較できないことになります。

米国の野菜消費の32%はジャガイモである。
2012年のUSDAのデータでは、
ジャガイモが野菜消費の第一位。

アメリカでは、ポテチチップスも、缶入りトマトも、缶入りコーンも、冷凍野菜も、野菜チップ(乾燥)も「野菜」に分類されている。
では、米国人は年間どれほどのジャガイモを食べているのか?

1ポンド =0.45359237 キログラムなので、
112x0.45359=50.8kg
2009年のデータでは、アメリカ人の1年間の野菜消費は123㎏
以上から、
米国人のジャガイモを除いた野菜の年間消費量は、
123-50.8=72.2㎏となる。
さらに、ポテトチップ、トマト缶詰を除外すると、もっと少なくなる。
結論
野菜という定義を「ジャガイモを含まない」とすれば、
日本人は米国人より1.4倍も野菜を多く食べている

アメリカでの野菜消費は、2010年では、一人一年間約380ポンドで、172キログラム。
しかし、以下のデータのように新鮮な野菜であれば、ジャガイモを含めても、
高々、200ポンド、つまり、90.8キログラム・・・・
2010年では、82kg程度・・・・

アメリカの野菜消費が野菜+ジャガイモであっても、
日本のジャガイモなしの野菜消費量の方が多いといえます。

では、「野菜摂取は大腸癌を予防する」のでしょうか?
TVで報道されない事実があります。
「日本人では大腸癌と野菜摂取量は無関係」
という事実です。
このことについては以前から報告がありました。

a pooled analysis of two prospective studies with 88,658 Japanese men and
women, fruit and vegetable consumptions, were not associated with a lower risk
of colorectal cancer (705 cases); multivariate relative risk (95%
confidence interval) for the highest vs the lowest quartile of intake being
0.92 (0.70-1.19) and 1.00 (0.79-1.27), respectively.

日本で報告された6つのコホート研究を分析した結果が以下です。
In the
present systematic review of Japanese studies for the association between
vegetable intake and colorectal cancer risk, most cohort studies did not detect
significant associations, whereas some case–control studies reported an inverse
association with colon or rectal cancer. The meta-analysis of cohort studies
did not show a significant association of vegetable intake with colorectal,
colon or rectal cancers, whereas that of case–control studies showed a
significantly decreased summary OR for colorectal cancer.
ケースコントロール研究では、結腸または直腸癌との逆相関を報告したのに対し、野菜の摂取量と大腸がんリスクとの関連のための日本研究の現在の系統的レビューでは、ほとんどのコホート研究では、有意な関連を検出しませんでした。症例対照研究では結腸直腸癌の減少を示したのに対し、コホート研究のメタアナリシスでは、大腸、結腸または直腸癌と野菜の摂取量の有意な関連はありませんでした。
Evaluation
of evidence on vegetable consumption and colorectal cancer in the Japanese
population
From these results and on the basis of
assumed biological plausibility, we conclude that the evidence is insufficient
to support an association between intake of vegetables and the risk of
colorectal cancer among the Japanese population.
日本人集団における野菜の摂取と大腸がんの証拠の評価
これらの結果から、我々は日本人では野菜の摂取量が結腸直腸癌のリスクとの関連を支持するには不十分であると結論付けます。
